So I really fancy running the excellent Twin Tiger Shark, a .JAR game, on my Pi.

It seems like it should be doable - here, for example, is someone running the Java version of Minecraft at a very acceptable speed on a Pi, and TTS is a 2D game and presumably will run better.

There's a thread here, which is useful in terms of setting it up with EmulationStation, but it's very old and seems like it's probably outdated - it's talking about Java 8 and having no sound and terrible performance, whereas we're now up to at least Java 17 or 18 and as noted, the video above appears to show it running pretty well with sound on Pi.

I've found loads of other guides, but they're all different and contradict each other. Is there a definitive up-to-date one?

Raspberry Pi 3b and 8GB Raspberry Pi 4, both running Retropie 4.7.1 installed from scratch using Raspberry Pi Imager, with wired keyboard, wireless mouse and double arcade joystick attached.
