How to add custom gamelist tag info and display it

I was trying to figure if it is possible to add custom XML data in the gamelist.xml files, so I can map that information to display it in my custom theme.I want to have a "Controls" column to descript "button > action" for each game and have that info in a reserved space in my theme but I'm not sure if this is possible
I understand that a possible solution would be to include this information inside <text name="md_description"> but I would like to have it as separate entities in the XML gamelist files and make something like <text name="md_controls">
I cannot see any place where XML gamelists mapping configuration happen...
