      USB Devices connected: XBox Wireless Controller Adapter
      Controller used: XBox Wireless with Wireless Adapter / XBox Series X Bluetooth Controller

      How to replicate the problem:
      I installed the experimental Steamlink packeage.
      I have the two controllers connected to my retropie. They work perfectly together in other emulators (eg SNES, N64)

      When I start the steamlink app only one controller is recognized. How can I make the steamlink app see both controllers to play couch coop games?

          When both controllers are turned on only the Series X controller is recognized. When the Series X Controller is switched off and only the XBox 360 Wireless controller is turned on, the XBox 360 Wireless Controller is recognized.

          Yesterday I somehow managed to get Couch Coop working with these steps:

          1. Start Steam Link with only XBox 360 Wireless Controller turned on
          2. Wait till Steam Link is completely started
          3. Turn on XBox Series X Controller

          But this is somehow very inconsistant and does not always work. I don't know why...

          Any help is appreciated <3

            SteamLink got recently more updates than the usual, something may have broke in the flurry of updates. Try running steamlink manually by running:

            $HOME/.local/share/SteamLink/steamlink.sh
            

            and look at the logging output for any inpute related messages. You can post the log on pastebin.com and provide the URL, maybe we can decode what's going on.

                No particular error shows up in the logs, the 360 is detected but not initialized as a gamepad though. Nothing comes to mind on what's going on.
                You may want to post in the Steamlink forums (https://steamcommunity.com/app/353380/discussions/0/) and post the link to your log there also. If any of the controller works by itself, then it's not a config issue and usually in situation like this I'd check if there's enough power for both the WiFi and USB at the time, but since they already work (simultaneously) outside Steamlink that can't be it.
