TL;DR: Be as specific as you can be to get the most likeliness to get your question addressed. (As a starter: emulationstation has a command line switch --debug)
Specific to the Rpi4 and 64bit RaspiOS it is WIP, you are going out on a limb.
Best would be to table your question at the Github Repo (the one with the guide you followed).
In general starting with an Raspberry Pi is easy, but it is hard to master (thus it is pretty much like many arcade games). You may decide to dig deeper into the Raspberry Pi and learn as you go (which is the purpose IMHO of a Raspberry Pi) or another option is to donate to RetroPie, which fuel the maintainers to propel this project further (and maybe have at some time Pi5 and 64bit RaspiOS in the mainline).
