RetroPie SD Card corrupts after shut down

Hi All,
I read through this thread: projectlRe: Power off Wipes The SD? and am having the same issue. Except he solved it by unplugging it differently. I'm not unplugging it, I'm just turning off a power switch the PSU is plugged in to. Until I shut down it works flawlessly, every time I shutdown and turn the system back on- blank screen and I have to reimage the SD.
I have a strong, high quality (Anker) 5V/2.5A power supply, with a brand new Lexar card I bought from my local retailer. So those are both reputable and not fakes.
My process for shutdown:
I go to menu/quit/shutdown, do a software shutdown, wait awhile to ensure everything writes out and shuts down properly, then turn the power off via a toggle switch.I have also done a command line shutdown.
Things I have tried:
-Writing the image with both Etcher and Win32 disk Imager
-Using the RetroPie and Raspberry Pie Jessie images
-Re-downloading the images
-Using different SD cards
-Pulling the power cord from the wall instead of using the toggle switch
-NOT doing a proper shutdown and just pulling the power while the unit is running (yeah, I know that's generally a bad idea but I'm running out of things to test)Still nothing has helped.
The only thing I can think of that I haven't done is swap out the Pie itself (I just ordered another one to test that as well).
Is there any wisdom out there about what may be going on?

@Guanavia I would try another SDCard. I recommend a SanDisk card. Could be a bad/faulty sdcard, or an incompatibility with that card.

Are you sure you wait enough time for shutdown before using the power switch ?
Could you post a link to your PSU model ?
Did you modify any config before shutdown ?
Do you have powersaving outlet that could cut power before complete shutdown ?
Does just a reboot work (without switching off power) ?
