Controls in Retropie-Setup?

Hey!
How can you change the controls for the RetroPie-Setup?
I was using an Image for the last 6 months where you've used 'A' instead of 'Start' in the RetroPie-Setup and in the screen where you change the emulator, I guess it's called Launch Options.
It is just something very minor, but I'm very used to using the 'A' and 'B'-Buttons to go through the menus now.
Also can I not access the Launch Options from the Controller anymore. I have to use a Keyboard to do that. Which is a little annoyance, because 'Launch menu joystick controls' is enabled in the RetroPie-Setup. While checking that I noticed that the only buttons that are working are the D-Pad, L2 and R2 and Start.
Does it have something to do with the Emulation station controls (es_input.cfg) or with the controls in RetroArch?
I'm using a Raspberry Pi 3b, a 8bitdo NES30 Pro and RetroPie Version 4.2.9.

LexxEdit: Found the solution for the mapping problem. The '8bitdo NES30 Pro.cfg' was messed up. Works perfectly now.
But I am still not able to enter the Launch Options with the Controller. -

You have to press the button you set for A. Try pressing several times.

I've tried it again with all buttons and both methods on the controller. Holding and tapping.
It only works with the 'A'-Button on my keyboard.I'll try to remove the keyboard and the keybinds for it and see it that helps.
