Here's a very nice low-cost project that someone (Edit: Ah, he's on here - Thanks @raspberrycoulis !) has published in the MagPi Magazine over a few issues.
He's pulled together the pages into a single PDF on his website:

I'm thinking of giving it a go, to use up the spare components I have left over from various upgrades, although I need to edit his files, as he's using a 7" screen, and I only have the old 8" Picade one spare.
