All games in one list.

Hi guys, I could really do with some help please.
I'm a very much a noob at all this. I'm building an arcade cabinet with a raspberry pi 1 model b and retropie. At first I was using Piplay, but I like the look of Emulation Station more. However, it's still far from perfect. What I basically want is all the roms that I've added in one list. Is this possible? I don't want to have to chose between consoles and then chose the games, I want them all in one list. I know they need different emulators for different systems, but can't I just manually chose the right emulator for each rom and have them all in one list?
I would also like it if there were no other options like the 'retropie' option where you can configure things. Of course, I will need to go in and configure stuff, but I don't want any of this to appear to the normal user on startup.I'm just trying to make it look like an authentic arcade machine and not an emulator.
Is there some way of modifying emulation station? Would I need to write some python code? Are there any other, more basic front ends available? Would I have to basically create my own (bare in mind that I'm a dumb noob)?

you probably should check the attract mode thread: https://retropie.org.uk/forum/topic/93/attract-mode-with-retropie-alternative-to-emulationstation
seems maybe what you're after? -
@05r13539 Yes Attract Mode will do all that for you if you set it up correctly.
