Retropie with a full Desktop Environment?

It's been so long since my last Pi 3 build I feel the need to ask the question again after reading posts for the past hour on forums.
I'm building a Pi 3 B+ system for a friend that will use "Retropie" for the frontend. Say I use the image below, put it on the SD card and boot up the system. I assume I will be taken to the Retropie setup screen. I should be able to setup all of that. However I want to be able to use Raspbian OS Desktop environment. My question is: Does the image below contain "both" the "Retropie" and "Raspbian OS?" How will I be able to change between Retropie and Rasbian OS Desktop environment? Is this possible with only the image below?
If it is not possible with just the image below do I need to install Raspbian OS on the SD card, insert it, boot and then copy Retropie over onto it?
Also as side question while I'm thinking about it...does 2 wireless Bluetooth Dual Shock 4 controllers work well, or would there be some conflicts?I appreciate any help I can get. Thank-you.

Power Supply used: 5V 2.4A Switching Power Supply with 20AWG MicroUSB Cable
RetroPie Version Used: retropie-4.4-rpi2_rpi3.img
Built From: Samsung 64GB 100MB/s (U3) MicroSDXC EVO Select Memory Card with Adapter (MB-ME64GA/AM)
USB Devices connected: Will have Logitech Bluetooth for Keyboard/Mouse
Controller used: Plan on using 2x Bluetooth Dual Shock 4 controllers -
The RetroPie image is Raspbian, although the Lite version. You can install the desktop and start when you want to - https://retropie.org.uk/docs/FAQ/#where-did-the-desktop-go. So you don't need to install Raspbian separately and you can switch between them.
As for the BT controllers, they should work without problems. Your power supply though might be inadequate, especially for the 3b+ model, so watch for the under-voltage 'thunderbolt' signal - https://raspberrypi.stackexchange.com/questions/57963/what-does-the-lightning-bolt-mean. -

I hope the adapter is enough its really 5.25V even though it states 5V. -
@darkkmatter It's the 2.4A spec that made me add the comment about the power supply. Just keep an eye on the thunderbolt sign and you'll know if the adapter performs well.

It might be a bit late, but if you use the Install Desktop feature, many options and settings are missing from the desktop install. Its almost useless. It doesnt even install a package manager... Instead, download the full Raspbian image and then install Retropie on top of that instead. Then, when you use the install desktop option, it will only create a link so it shows up in Emulationstation. Its pretty useful! Drop into a desktop between games, etc..

@doubleeuroz It's been a while since I installed this way but I'm almost sure that
synaptic
is included when you install the LXDE/PIXEL Desktop on top of Raspbian Lite. -
