RetroPie Problems with brilliant ScummVM

I'm using ScummVM 1.8.1pre (Mar 7 2016 00:34:19) to play Zork The Grand Inquisitor for the first time since buying the disk yonks ago (never had a machine that would run it).
ScummVM is fantastic, but on my Raspberry Pi 3 there are a couple of significant issues...
- Xbox 360 Joypad emulation of the mouse is very laggy on RetroPie 3.8. There's more on this here:
- I'm unable to pull up the menu bar (Resume/Load/Save/Options/Help/About/Return to Launcher/Quit) using the joypad controller. I can do this with Monkey Island.
It would be brilliant if these issues could be fixed, as I'm trying to make this set-up potentially accessible for a range of disabled users. I'll be pointing to GOG.com, but I need to get it all working first.
- Huge ask, but a virtual keyboard for access via the mouse/joystick would be a huge boon for point and click games needing the occasional keyboard press for disabled users unable to access a standard keyboard.
I'm hoping to make a few key Scumm compatible games possible to play using a single switch for some of the most disabled gamers, so anything you can do to boost access with the 3 points above would be hugely appreciated.

@martinbaker2727 maybe you can try the soon-to-be-available libretro core version of ScummVM. Check this topic for more info: https://retropie.org.uk/forum/topic/19693/lr-scummvm-request-for-comments-and-testing
Because it's RetroArch-based, you can easily map any gamepad buttons (or any other input device) to ScummVM functions such as mouse right/left clicking or numeric keyboard (often used in some games). All the mapeable keys are here: https://docs.libretro.com/library/scummvm/#joypad.
Warning: if you use the scriptmodule in the forum topic I pointed, please do not follow the earlier parts of the docs (the setup) as these are all automatically done for you with the scriptmodule.
I also would strongly recommend you to start from a fresh updated RetroPie installation. You seem to be using a very old ScummVM version.
Finally, I think that what you are doing is really great. Kudos to you.

@martinbaker2727 Mouse issues in ScummVM were resolved with the release of version 2.0. As you are running an old version of RetroPie which runs on Jessie, for which support is no longer available, I would recommend that you start with the latest 4.4 image.
A virtual keyboard should be available in the latest version of ScummVM. It can be activated by button 7 on your controller, which, I understand, is the Guide button. If the virtual keyboard is not available, then try installing ScummVM from source.
The ScummVM in-game menu is only available with a button press for Lucas Arts titles. For other titles, it can be accessed by pressing CTRL+F5. According to the manual, in Zork The Grand Inquisitor, there are options to save, restore and quit in the Center Bar, accessed by moving your cursor to the top of screen.
