Everytime EmulationStation starts it says LOADING SYSTEM CONFIG...

Need help fixing "Loading System Config" when booting emulationstation/retropie.
I did a fresh install of latest RetroPie on Raspberry Pi 3B+ because I got a new microSD card. I set it up fine, it worked, I scraped the game systems using Selph's Scraper. It downloaded all the marquees, videos, images etc. into each game systems ROM folder. And I can confirm by using WinSCP that the images/videos are downloaded.
Then I chose update all packages from RetroPie Setup, which seems to have messed everything up.
Now whenever I start up RetroPie, EmulationStation reads Loading System Config...
Followed by 'Loading Atari 2600' (1/28)
This happens every time I boot up, or reboot, RetroPie. Its like a continuous loop. And the scraped systems don't display any images or video.
What happened? This all occured after I chose update all packages from RetroPie Setup. How do I fix it so Loading System Config... doesn't appear everytime I boot up retropie?

@hfgx1 This is not an error, but just a progress indicator for you to know what's Emulationstation doing during startup. If you find that ES stays a long time ago at this stage, then it means you have a lot of ROMs and it takes ES a long time to scan the ROM folders.
How many ROM do you have ?
