@drevil2002 Whatever is configured as "Select" (or the "Hot Key") + Start if it's one of the lr-emulators. The other shortcuts are here

Depending on your version of Retroarch you have that's true. The newer versions of Retroarch removed this feature and require a keyboard.

If Retroarch is green and black text over your game then it's an old version with can use the "start and select/hotkey" shortcut. If Retroarch is a blue background then you need a keyboard to exit a game. At least that's what I've found. I haven't written any custom scripts.

no versions of retropie will have the retroarch with the blue background (XMB menu driver) by default. we default to the RGUI menu driver.

If you use the 'Reset configuration' in RetroArch's menu, it will re-enable the XMB` input driver (the blue PS3 like menu interface). As @dankcushions said, by default RetroPies does not enable it, it configures the RGUI menu driver instead. Bot the XMB interface should support the exit hotkeys also, it's not an exclusive RGUI shortcut.

I chose the "update installed packages" option and was surprised to find the newer RetroArch on that machine.
