      Is there a way in retropie setup script to select a specific version for the lr-mame core? Seeing as mame updates monthly now, the version changes pretty frequently.

      I'm curious in the the hypothetical situation where I have to reinstall, but have a backup of my current romset that works with 0.215. Is there a way I could choose a specific version of lr-mame core so I wouldn't have to update/rebuild my romset?

        No, that's not possible - that's just how the Libretro upstream project works. If you want to keep a specific version of MAME, then you'll need to back-up manually the core file before updating.
