Multiple semi-noob controls questions

Hi all, I know I've stumbled on a menu in the Retroarch sub-menus where you can elect to turn the Mame menu on at all times. For the life of me, I can no longer find it. This MAMA menu is the one where you can configure the controls for that specific game, with the added benefit of configuring buttons and joysticks across multiple different inputs, unlike the Retroarch 'input' menu which only allows you to map inputs from a single controller. On some games, I can trigger this MAME menu with a button, whereas on other games I have to select this menu from the Retroarch menu to access it.
I'm specifically trying to configure the controls for Battle Zone, but I can't figure out how to get this menu to pop up.
Thanks for any help on this, I feel like I'm losing my mind!

OK, did some more digging and found out that this menu option appears in the 'Quick Menu' section of Retroarch under 'Options' on a game like Joust. What I'm guessing is that Battle Zone uses a different emulator, and that's the difference I'm seeing. In the 'Options' section of Battle Zone, there is no Mame menu option.
How would I go about configuring controls across different controllers w/ this setup on Battle Zone? I'm trying to use joystick 1/player 1 and joystick 1/player 2 to operate the tracks on the tank fore/aft. I have it set up this way through the Mame menu for games like Robotron and Smash TV.
Also, how do I know what emulator I'm using for a specific game? I'm using Virtual Man's 128g Retro Bliss image, if that matters
