A friend of mind just purchased this, https://www.microcenter.com/product/623130/atari-ultimate-dual-arcade-fight-stick-with-trackball,-includes-raspberry-pi-3b-and-32gb-micro-sd-card-with-over-140-classic-atari-games. I'm trying to help him configure the trackball settings but it's not letting me pull up the in-game menu or change any of the options and doesn't even give me the option to configure it. Certain games the trackball works perfectly, but then some other games it's not even worth playing because it's so horribly calibrated. Any help would be amazing.

@xallius 3rd party images aren't supported on the forums, especially ones that come pre-loaded with game ROMS.

I'd suggest going back to the seller for support, or install the official image from the Retropie site and then the community will be able to assist you.
