Change default retropie rom location to a 2nd partition running in Ubuntu on PC

Hi, I have seen lots of great guides for how to change the rom location to a 2nd drive, but I am running ZorinOS (Ubuntu like distro) on a PC, and have setup my hard drive so that I have a system partition and a much larger 2nd partition where I want to store all of my roms. This 2nd partition already automounts and is setup with a folder for roms under /mnt/roms
I installed retropie using the default scripts.
My question is how do I get Retropie/emulationstation to point to this new location for roms instead of /home/RetroPie/roms? Thanks!
