Simple overview of Retroarch config / files?

Hello all, and I apologize if this has been posted before.
Can someone please point me to a resource that explains (in simple terms if possible) how Retroarch config files and menus work? I have a very limited understanding, and I was using the (hotkey)-X menu to try to change some settings while I was troubleshooting some issues playing games.
Unfortunately I made too many changes, but I found an option to go back to my default config file - When I did this, the entire menu system changed. It went from a very simple blocky green and black screen to a very modern looking UI. This is great, but it also changed a bunch of my settings in ways that they weren't set up with a fresh install of Retropie (e.g. having to press twice to exit, save-on-exit turned on, etc.)
TL/DR: I have learned that the config file as provided during a fresh 'retropie' install is NOT the same as the 'default' you get if you reset it. Is there someone I can obtain the 'retropie' original (for SNES?)
Any general guidance as to how these files are located, used, and handled would also be appreciated.

this also explains how to reset back to retropie's default configs (which, as you've found is quite different from retroarch's)
