In order to first get Dreamcast to work I had to do the following:

      1. Go into the /opt/retropie/emulators/reicast/bin/reicast.sh file and comment out the getautoconf line
      2. Set the correct controller and automap files in emu.cfg

This was all to get past the date/time screen as I was unable to to select the time.
Now I can start games without difficulty, but can't save. I can't select a vmu port to save in or use my save/load states. When I try this it simply exits out into emulation station. Any help would be much appreciated.

I'm not sure why it drops out to emulationstation, but I do know that you need to open the system manager and delete all the corrupt saves in the vmu, for some reason the first time you start the emulator all the slots in the vmu are taken up with corrupt saves.
