Retroarch menu broken

Lately when I go into the retroarch menu, it freezes up and doesn't respond to any controller or keyboard inputs. I can only use Alt-F4 to close the emulator at that point and return to emulationstation. This happens with every core I try.
Is there a way to completely delete/reset retroarch's settings and configuration, without uninstalling everything and reinstalling it? I tried removing the core package for it and reinstalling it, but that didn't seem to change anything. I also tried deleting opt/retropie/configs/nes/retroarch.cfg. As expected, retroarch recreated the cfg file but the menu was still broken.
Any thoughts/suggestions?
Pi Model or other hardware: x86 PC
RetroPie Version Used: 4.8.3
Built From: Ubuntu 22.04, all packages up to date as of this morning.
USB Devices connected: wireless keyboard dongle
Controller used: SN30pro+
Error messages received: None, and I couldn't find a log file that seemed relevant. -
@vermilionwizard if you remove the retroarch configs you need to reinstall retroarch and a libretro nes emulator. Please remove
/opt/retropie/configs/all/retroarch.cfg
and
/opt/retropie/configs/nes/retroarch.cfg
Then reinstall both retroarch and the libretro NES emulator you are using. The configs should then be recreated with the default settings.

@BuZz OK thanks, that got me back to the defaults.
After doing that the menu still wasn't responding so I deleted the emulationstation input configurations. Now it seems to be working better.
