Newbie - XBox Controller or USB Keyboard help to actually play a game :)

OK, so I've got RetroPie running EmulationStation and have copied Pac-Man and JetPac to the correct folder to play.
I've started both games but no buttons on the (successfully configured) Xbox Controller or attached USB keyboard seem to do anything apart from ESC.
What am I doing wrong? How do I play a game please?
