      I know that I cant use a Bluetooth device AND a PS3 Controller - except the Device comes with a Dongle and is sending with 2.4Ghz.
      Now my problem is my Logitech K360 Wireless Keyboard wont work. Dongle is inserted and PS3 controller works flawlessly.
      Do I have to adjust some config maybe?

        It could be a conflict with too many 2.4 ghz signals nearby. WIFI, Bluetooth and your wireless keyboard all function in the 2.4ghz range and may be jamming the signal from the keyboard. There is nothing in retropie on a pi (I'm assuming you're using a pi, you didn't specify) that prevents a generic keyboard from working. Assuming again that the logitech keyboard is using a standard keyboard signal and no reason logitech would do its own proprietary signal.

          Yea I use the RetroPie 3B. I dont have many wireless devices so I dont think this...

            @Psy0ch not completely true. Uninstall the ps3 driver, set up all blutooth devices you want, then re-setup the ps3 controller. Then if you need to add more bluetooth devices then remove the ps3 controller driver, add the new devices, then set up the ps3 controller again. I have 3 devices and a ps3 controller set up and working just fine.
