USB External HDD problems

Hi all,
Totally new to Linux and Retropie trying to get my head around this small but difficult issue. Found heaps of info on the net but way too advanced for me to understand!!
Issue is: Every time I remove my HDD from my Pie to add media to it and then re-plug it in the Pie, the Pie (Linux) re-assigns a different USB port to it. It is frustrating because this in turn changes the source file in KODI causing me to have to re-scrape every time to get all the metadata etc.
There is some info on the net suggesting to use UDEV in Linux to create a persistent naming device. From what I understand, by getting either Vendor ID, Product ID or UUID of the HDD and assigning the USB directly to it. Problem is the internet is littered with this kind of info. but no step by step guide for a complete noobs!!!
All I have managed to do is get the Vendor and Product ID via terminal.
Any help appreciated.
