Multiple controller panel setups?

Hi all,
I am a first time builder and had a question about Arcade controls.
I plan to build a 2 player controls setup with various extra buttons for the pi functions but I would also love to have a control panel with a spinner and one with a trackball.
I do not want to put all of those together but maybe have the joystick panel be removable (and unplug the USB plug) then put in the trackball panel.
Does that make sense?
Would this be quick and easy once it was all set up from a software point of view?
