HELP - getting the 8BitDo FC30 Pro controller working with Retroarch

Hi all,
I have spent all weekend searching on here (and following the advice) trying to get the 8BitDo FC30 Pro controller working with the ARCADE setcion of RetroPie but without succes and hopefully someone on here can help me :)
I am running the very latest version of RetroPie and, according to 8BitDo's update software, version 1.7 of the controller's firmware.
My Pi 3 bluetooth control can see the controller and I can see it in ES and configure it (all the button presses are recognised) and it I can navigate through all the ES screens/menus using the FC30 without any problem at all.
When I go into any other emulator (say SNES, Spectrum, etc) and select a game then I see "FC30 Pro ..." in yellow in tbe bottom left hand corner of the screen, as expected and the buttons sort of work - they might be working properly but since I am testing random games I have no idea what the actual controls are :)
However, when I go to ARCADE and select a game ... there is no yellow text in the bottom left corner. When I press ESC and hit ENTER for "input (general)" and start assigning buttons then most of the button presses are detected but when I ESC out and try the game the buttons are no longer mapped correctly. Also, the "input (general)" window doesn't recognise any movement on the d-pad (but ES detects it fine).
Does anybody have any idea what I am missing / doing wrong and can offer some guidance before I pull out what little hair I have left ? Does anybody have this controller and is able to share there retroarch config files for it ?

UPDATE:
Ok I think I have partially solved my own problem by downgrading the firmware to 1.69
That's solved a lot of the problems I was having but I now have a new one whereby I quit out of MAME games back to ES. I was under the impression that by default this was just START + SELECT at the same time but it doesn't do anything for me.
Any ideas ?
