With me it is Tempest. No matter how many videos I watch or how much I practice, I can't seem to get any better. Any training hints would be great, because simply saving state all the time isn't really helping my skill level.

System Config: Retropie 4.4 with full desktop, RPi 3B, 256gb SD, 5v 2.1A 5,200 mAH USB battery. EasyMSX controller mounted with Pimoroni Hyperpixel 4 (non touch). Also running 4.6 on a 4gb Pi 4 serving as my primary desktop computer now.

What type of controls are you using? Playing any other way than with an analog spinner will obviously put you at a disadvantage from the beginning. Outside of that, you can still do very well with an analog input device of some kind, such as a thumbstick or mouse. However, if you're only able to play with digital controls, you'll ultimately just have to make peace with low scores and early deaths. It's the same with the Pac-Man titles on setups without a four-way restriction option of some kind. No matter how much you practice, the controls will always be working against you.

Edit: As for the main topic, I've always wanted to master 'Defender' and 'Stargate', but my scores have never been anything to write home about.

@mediamogul You need four arms to master those games. The controls and the difficulty level are staggering. Yet I have seen a Stargate master play to lvl 99 in my teens. I don't know how he did it. I'm thinking drugs. LOL...

As for Tempest, I do indeed get my best scores with a mouse. They also have the machine at our local barcade. Even with the incremental dial I still can't get past lvl 17.

Honestly, I'm still trying to beat Sonic the Hedgehog 2. I've beaten way tougher games but this one just has my number.

Definitely. On top of a difficult control scheme, the games themselves are relentless. If they weren't so much fun I'm sure I would've given up on them long ago. As an aside, I love the inside joke in 'Avengers: Infinity War' that sees teenage Groot playing 'Arcade Defender' while the team responds to a call for help that results in them catching a falling man with their space ship. Too funny and very clever.

It may not set a record, but it's still not bad. That game is extremely tough as well, even with an ideal control scheme.
