Extracting Neo-Geo Roms

Super glad to have found this thread [1], I was starting to feel like a crazy person for wanting to build up a legal ROMs collection. The absolute bewilderment of most people when you ask questions about extracting/using ROMs you obtained by actually purchasing - "Just download them!?".
Generally I'm extracting ROMs when the original source is either sub-standard emulation or just inconvenient. So far I have the ROMs from all the mini consoles (besides the turbogfx mini which disappointingly has not been hacked yet), some steam collections (e.g genesis collection), some of the Delta East classix from GOG and Neo-geo ROMs from the Prime Gaming giveaway AND some purchased from GOG (these seem to be the same).
What I really, really want though is good quality emulated Neo-geo games as the emulation quality of what we have currently is really poor (cough Dotemu). I do really rate the Hamster ports but I really wish they were available on Steam and not the Windows store. I'd be really interested to hear if anyone has managed to extract the ROMs from these Windows store Hamster ports or perhaps the Android APKs.
I find the concept of arcade ROMsets quite confusing. Most people suggest to just download a complete ROMset, which I don't want to do for obvious reasons, so by purchasing ROMs you're essentially working backwards - have the ROM, find the right emulator for those ROMs. My assumption is, if it works ok, it's 'correct'. If I have the MD5 hash for the ROM zip, can I work out the intended emulator for it? I imagine most of the Neogeo ROMs for sale are from the same set so a single emulator/core will suffice to run them.

@SeeNoWeevil Yeah, arcade roms are a headache and you are correct, you have extracted roms, but don’t know what version of MAME they are for. It’s just as bad as finding a random arcade rom on the internet and hoping it works.
But there is good news, most neo geo roms have not been changed in years as they were ripped very well early on. So your best bet is try to run them on Finalburn neo and see if they work. If not, try MAME 2003. You will also need a neogeo bios file put into the bios folder. Which is just as illegal as downloading a rom. Or if you're lucky, the makers of these machines and gog may have put it into each rom or have a copy somewhere that you can extract it.
