The dev for Panda3DS was kind enough to play around and get Open GLES working in a ticket on GitHub, so it's possible to build the emulator on raspberry pi 5 now if anyone is interested:-

@retropieuser555 I came across lime also. That I'll be working on testing.

But great to have more options
