How can I change my resolution of ES to make nes mini theme work?

I am super new to this so I need a lot of hand holding to do this without bricking my Pi and starting fresh. (I've done it twice.)
How can I change the resolution of Emulation Station to get the NES mini theme to work?
Once I change it, will my other themes work?
Can I write a rule that the famicom mini and NES mini themes scale up to 1080p while the rest stay at 720p?Thanks, Hankola.
