Some RetroPie Questions

Hi all, firstly thank you all so much for your help over the past few weeks. I'm totally new here but thanks to you all, I've learnt so much and come to see it's a fantastic community of people. I was expecting trolls and allsorts to start with given experiences on other threads, but you lot are just great, so thanks.
Few questions as I'm a bit stumped!
1 - I've messed about with the video settings in a few emulators. Now when games load, I get text on screen saying something about HDMI when this didn't happen before. Can I just reset to default settings, or do I have to reinstall Retropie?
2 - N64... how do I exit a game and go back to the main menu?! I keep having to use a keyboard. Is there an easy way to have it so like the other emulators, I press two buttons together and they exit?
3 - The Pi itself... I shut it down via the menu, but to start it up again, I have to unplug it and plug it back in - is this the correct way?
4 - I've managed to change the NES emulator so it's full screen and it looks great! But how do I do this for SNES and N64? I don't seem to be able to.
5 - Does Zelda, Donkey Kong and Mario 64 actually work without overclocking? I don't want to get 25% in and then find I can't continue!
6 - Finally, I know I've talked about this before, and had answers, but OMFG the controls to move the camera around on N64 games are shocking! Is this just how it is?! Am I too used to Current gen games?

I'd recommend having a thread for each problem you have so you can provide more specific detail.Please include this:
https://retropie.org.uk/forum/topic/3/read-this-firstSaying things like "NES emulator" , not specifying the version of RetroPie you run or "messed about with the video settings" without saying what changed isnt going to help you get useful answers.
