Install retropie on an "old" computer

Hi there,
I would like to use my previous build to run retropie, the pc would be built from an:
- asus mother board
- intel i7 6700K
- geforce 1080GTX
My idea would be to use the geforce in order to run more demanding emulators (such as PS2 or N64). I do not think this is possible with rasbian, I am a real newbie for everything that touch to UNIX so my question is : is it possible to install Retropie on a system that would use the hardware properly ?
Also, I really DO NOT WANT to use retroarch, I hate this platform, it's UI is a constant headache, I would rather instead do my own stuff with launchbox but really I do like Retropie so ideally I'd like to find a solution for this.

RetroPie can be installed on Ubuntu Linux, this should cover a lot of PC models, old or recent. See https://retropie.org.uk/docs/Debian/.

Sounds to me like you basically just want the "new" build of EmulationStation. RetroPie is basically just the pre-configured libretro emulators on top of a pre-configured EmulationStation alongside a number of non-libretro emulators for niche systems or where the libretro emulators have compatibility issues.
The problem is that the latest "official" binary release of ES is from 2015 and all development since then has been done as a separate RetroPie fork, for which RetroPie does not produce Windows binaries. You can compile it yourself, but it's a fair bit of work under Windows. Probably a bit easier under Linux using cmake.
I share your pain in dealing with the Retroarch interface though. It's absolutely horrid.
