RetroPie on Ubuntu Mate 20.4.01 HDMI sound issue

I followed the official guidelines as stated in https://retropie.org.uk/docs/Debian/ and cloned git repo and performed basic install as described.
Sound works fine on audio jack on my PC. I installed indicator-sound-switcher for convenient switching between HDMI and audio jack. HDMI audio in general works fine on my TV (e.g. using YouTube).
As soon as I start any game (tried Ninja Gaiden on SNES, Ghouls and Ghosts on NES and some games on Sega) my audio is
broken
all over. Weird pitching and cracking sounds, sometimes sound is lost completely.I already tried setting bitrate to 44100 in retroarch cfg (in all directory) and audio driver to sdl.
I have a Raspberry PI 4 8GB, 5.1V power supply. Tried different HDMI cables. Similar scenario with Rasbian. I am kinda getting frustrated with this. I just wanna play some retro games on my TV..
Any help is appreciated

We don't support Ubuntu on the Raspberry Pi. The Debian installation is for PC systems. If you wish to use RetroPie on the Pi4, then you'll have to use Raspbian.

I see Ubuntu is only listed on x86 systems. I get the point that you cannot support all OS and there might be different situations occuring. Still there are some people complaining about the same issue on Raspbian and I guess there is a way fix it in both distributions. I might try Raspbian again (already had it) but I had some other issues there in the past (related to bluetooth and WLAN) and it there is only a 32bit version available.
Isn't there anything more I could try, specifically in RetroArch/Pie config?

RetroPie has only experimental support for 64 bit on the Pi, using the Raspberry OS 64 bit beta version.

You can try to disable PulseAudio and make sure RetroArch uses ALSA.
