First ever R Pi project, would this work?

Hello,
as stated, this is going to be my first ever Raspberry Pi project. I have an very old portable DVD player that is broken so I initially just wanted to use the screen and build a portable console similar to GameBoy Zero (as on youtube), but then decided to try something else:- Keep the Screen in the case
- use the portable DVD player case and replace the electronics and disc reader with a Raspberry Pi 3
- use either with internal screen or HDMI Out
Basically, a small home gaming console that can be plugged into a TV or used standalone with the internal screen. I don't need it to be a truly portable device to use outdoors with a battery, this is why I am aiming for a Pi 3 rather than Zero for better performance.
Since the screen uses a pin connector (I didn't count them, but there should be at least 8 or 10 pin holes) that was originally connected to the dvd players board, I will most likely need a different board to connect the screen onto, which will then be connected to the Pi 3.
What would I need, except the Raspberry Pi 3 and a few Female USB Cables to extend the Raspberry Pi's ports to the case, to get the screen connected to the Pi? There probably is, or I could solder one myself, a connector or adapter that converts the pin connector to HDMI, so it can be connected to the Pi 3, but that would use up the only HDMI port so it can no longer be connected to a TV. From various GameBoy Zero videos I've noticed they used several boards that were all wired to the Raspberry Zero, so I am curious what kind of board I would need to connect a screen to a Raspberry Pi 3.

@FliP if the DVD player has a composite video in, it should be straightforward to tap into that line. If not, you may have your work cut out for you getting the screen to work.
Everything else you've suggested sounds very doable.

@obsidianspider I think it has a 3.5mm jack video input, but I never used it.
