Evenin' all,

I'm not sure what I've managed to do but whenever I pick an emulator it auto-starts a random rom, any ideas?

Do you have the turbo enabled on your controller?

What do you mean when you pick an emulator. You usually pick an emulator after selecting a rom. Do you mean when selecting the system it automatically opens a rom?
