Hello all! So, I have been looking to create a custom retropie menu for some custom things in the future. Question is, how do / can I add one? Just, anywhere I should look or any page that shows how? Thanks!

@AppleBabies you can add any shell script you want in the /home/pi/RetroPie/retropiemenu folder

If you read the documentation it will answer 99% of your questions: https://retropie.org.uk/docs/

Also if you want a solution to your problems read this first: https://retropie.org.uk/forum/topic/3/read-this-first

And remember to keep the "Parse Gamelists Only" option off. This is the default, if you didn't change, don't worry.
