Can't get rid of metadata text, carbon theme, rp4.2

I'm using retropie 4.2 on a pi3, 2.5A power supply. My issue is that I can't seem to completely remove the text that scrapers put on the gamelist screen (is that the metadata text?) - the ratings stars, number of times played, etc.. I used the dbgames scraper for one game to get the "format" of the screen the way I wanted it - the game list left-justified, and a large image is on the right side of the screen. From there, I did everything manually in the gamelist.xml file (/opt/retropie/configs/all/emulationstation/gamelists/mame-libretro/gamelist.xml) - that is, I chose my own images and name of the games there.
I edited theme.xml (/etc/emulationstation/themes/carbon/mame-libretro/theme.xml) and the theme.xml file in the carbon folder itself. In there, I changed the size and location of the image, and the font size for the gamelist. I tried to remove all the metadata text that the scraper would put there - times played, rating, etc. Everything looks great except that the metadata text is still there, though now it's dark - looks like an afterimage against the dark carbon background. All that text is over on the left side, among the game list, so it looks a little ugly. Does anyone know how to completely remove all the metadata text, but leave the rest of the theme the way I have it set?

@paulace55 yep. You need to edit the theme.
Or use carbon-nometa but that's not in parity with latest es source changes

Thanks, herb - but it looks like there are several theme.xml files around. Do they all have to be edited? I've edited two of them, and it looks like I've removed any references to the metadata text...but it's still there. Is there a xml file somewhere that I'm missing? I was able to resize the image and move it around, so I'm having some effect - just can't seem to get rid of that text...

Ah, so I made a mistake by erasing all the metadata from theme.xml. Looks like I should have set the size to zero instead. Well, I'll see if I can recover the metadata - maybe scrape one game? Anyway, thanks for pointing me in the right direction! -
@herb_fargus I got the look I wanted finally by updating the carbon theme to replace the text that I had erased from theme.xml, then changing the font size to 0.001, effectively making it disappear. I tried to make the size "0", but ES didn't like that - wouldn't boot into ES. But .001 works just fine.
