@DjDiabolik I also have a NUC and also got that same "no more fullscreen" EmulationStation issue. As @mitu said, it's because at one point an update from Ubuntu replaced the original GUI engine by Wayland.
But I'm like you: at first, I had no idea what "Log out of the desktop session and choose Gnome on Xorg as the session type" was supposed to mean on my login screen. mmmmmmmmmm.. currently and recently on my NUC i have also used an extra tools.

After add the 'Hide Top Bar' extension apparently can use Wayland whitout any issue.
