RetroPie build focused on old computer emulation on a Pi Zero

I am considering a Raspberry Pi Zero RetroPie build where I remove (or do not use) any emulators that are game system based, and only focus on old computer systems such as Apple II, Commodore, Atari ST, etc.
My desire seems simple, and I imagine that the Pi Zero could handle all of these emulators, but I would appreciate any advice or warnings that forum members may have experienced . I would also be happy to hear any "should do". or even "Make sure you add ______ emulator/core" I am sure there may be some I do not think of that are in the experimental packages.
Has anyone done a build like this?
I have also considered doing this type of build on a Eee PC 1000 that I have lying around.

@detron Just don't put ROMs in the folders of the systems you don't want to use and they won't show in EmulationStation. You can also manually go into the RetroPie setup menu and remove emulators if you're worried about bloat, but they don't take up that much room.

this would be a neat little retro computerI think that installing a minimalistic Debian-based distro and then RetroPie would work fine for this purpose.

Thanks. yeah, I planned on leaving them (and not installing optional ones) but I appreciate you not assuming I knew this. I wonder how many problems in the world are a result of people assuming that someone else knows something
