Sam Coupe / SimCoupe and standardised controls

I was wondering whether anyone knows how to use SimCoupe to standardise controls (keyboard or joystick) for Sam Coupe games. I know about the function keys and I'm using xboxdrv to allow me to enter the options and exit the emulator easily enough using my arcade style joystick, but it's the individual game controls I'm wondering about. Sim Coupe is not a libretro core so I'm probably out of luck.... Thanks.
