      Is there a way to edit and or hide the text that comes up when going to the command prompt?
      I have seen where people have added their signature and rom build number to the line just after The RetroPie Project and would like to be able to also do this.

      Also is there a way to hide this all together when exiting and doing a shutdown/reboot Really only care if this ciomes up if they SSH into the unit or F4

        The text is shown on login for the user Pi and it's part of the bashwelcometweak package that is installed automatically. If you want to change it, you should edit the /home/pi/.bashrc file on your system - you'll need to use SSH or SFTP to do that.
