I have had some experience using RetroPie but i really would like to know how I could make my own custom theme for it? Is there any tutorials here or online explaining the process? I would really appreciate it.

There is not a whole bunch of info on how to make themes, and its not that simple either.
My technique is copying the simple theme to a pc, then change all the images.
if you want to change the layout, then there's a tool made by Rookervik http://blog.petrockblock.com/forums/topic/es-theme-helper/.
You can change basically everything with this tool.
