I'm trying to get AV output from my raspberry pi 3b+ for an older TV but don't want to get one of those bulky adapters.

Can you be more specific ? Video in connections does the older TV support ? SCART/Composite/Component/VGA ?
The simplest solution is to get a composite video cable and use the analog output from the PI to connect to the TV.
