I believe both these games used optical joysticks that effectively gave 49-way options, is there any way of replicating their operation when using Retropie and Mame?

      Raspberry Pi 400 - overclocked to 2.3GHz
      Theme - Comic book
      Emulators: All of them...
Roms: Pretty much all of them...
Favourite games: Circus Charlie, Gorf, Gauntlet Legends
      Controllers: Mayflash F101

According to these pages, both Sinistar and Bubbles use an 8-way joystick, so any gamepad supporting this kind of input should work. Are these the games you are looking for ?

You are correct about the 49-way control, and yes it can be replicated.
I'm currently using MAME-2003 and a PS4 controller. The left analog stick absolutely works well with Sinistar. When playing, gradually rotate the stick and you will see it handles more than 8-way control.

FWIW: I couldn't get the same results with MAME-2003-Plus. I think it has special configurations to handle analog, but I never researched, as 2003 (standard) does the job well.
