So I was wondering can I launch a different image before every game with mame on retropie on the raspberry pi. Like digdug image before digdug and Pacman before Pacman? I couldn't find any thing on this.

Sure you can. Check the docs.
You can find overlays and launching images for many arcade classics in my Repo.
