I have a pi a short time ago, and I have an analog tv with RCA input, I want to put my PI in the analog jack 3.5mm video input, how to do this process leaving automatic in hdmi and analog video in 3.5mm jack output?

The PI will try to auto-detect your VIDEO connection - if it detects a HDMI signal, it will use it, otherwise it will try to use the analog port.
Give it a try and see if works for you. -
@mitu I tried to use the analog output but it did not identify but with an older version of the retropie was installed and had the option to choose, but presented monochrome video. In this version that is retropie 4.3 does not have the option and I do not know how to fix the monnochrome video.

Try playing with the
sdtv_mode
option in the configuration file - https://elinux.org/RPiconfig#Video_mode_options - and see if it helps. Are you sure you are using the proper TRRS analog cable for the composite video output (see here) ? -
