Other than a 2017 post that said give up as the first answer I haven't found much on this topic. Is there anyone using a Retropie device without a physical connection to the tv?

Everything I've been able to find for streaming/casting is regarding streaming TO the pie, which is not what I want. I just redid my bar and want to keep the Xarcade stick and device on the bartop. The tv is 5 feet away on the back wall. I don't want an HDMI cable hanging across. This seems like a simple thing but can't find any reference or video to anyone doing it....

It's a newer Samsung 65" with BT and wifi. I've just been looking around for existing solutions before I did into it this weekend. No sense reinventing the wheel.

      Anyone?

Maybe something like https://github.com/hanzelpeter/dispmanx_vnc, to stream the PI's video output and connect a VNC client to control and interact. Most likely latency will be a killer for games if you use the 2.4 Ghz Wifi.
