To be honest man if your going to be putting this nice hardware in this nice cabinet, I’d spend a little extra money and build a nice PC to run this all with and forget about the pi....

What would the benefit be? Does Pi run slower than a PC would? Is there noticeable lag?

A PC has more power than a PI or any other small board computer (SBC), both CPU and GPU wise.

They aren't doing anything you cant do yourself. Just looks like they are using emulation station or attract mode as the front end. Plus they have so many systems set up on that image I don't know how you would ever find anything...

Yes you can set resolution and aspect ratio to your hearts content.
I don't have experience with arcade style controls but it should be very easy to setup. There are a lot of people who use setups similar to what you're looking for.

It looks like the Nevato theme of the frontend Attract Mode which is available in Retropie's experimental packages.

@taz101 you would need something like this to connect the controls to the pi:
2.8mm for Japan controls, I've ordered from that website a few times and have no complaints. I'd also recommend trying to wire up this:

It's nice having it all controlled with one switch and just one kettle lead needed to plug it in.

@taz101 you probably will need to configure controls after, I did with my bartop and made custom screens to show the controls while the game loads. Makes playing a lot easier.
Hyperpie is Retropie with Attract Mode and themes added ready to go, you can get the base image for it for free so don't pay someone for it.
