So I accidentally enabled analog output in the pi4 settings and I don't have a place to display it so I was wondering how to disable it with the config.txt. I would like it to be an HDMI output.

Remove/comment the line with enable_tvout from config.txt and it should disable the composite video output.

@Brotatochip Please add more info about your setup - including the TV model/resolution. See https://retropie.org.uk/forum/topic/3/read-this-first.

Did it worked correctly before you used raspi-config to change the tv out settings ? Can you post your config.txt file ?
