Arcade Cabinet-simple tweaks/suggestions needed

I am taking my RetroPie and throwing it in a cabinet but had a couple minor questions. Three actually.
1-Is there a way to lock the MAME screen so a user cant hit a button and open up the MAME settings when a game is loading. Referring to the MAME screen that pops up before a game boots. This is fine the way I was using it but once in a cabinet dont want kids to accidentally hit it and then have a mess.
2-Same question but referring to the RetroPie settings that pops up when a button is hit on the stick.
3-Hotkey setup. This is fine on my joystick when I am using it but putting it into a cabinet what is the best way to make reset, and getting out of a game easy for someone who doesnt easily understand this. Thanks.
