Image issue and question

If this is the wrong place for this then let me know and I'll move it. Huge noob to retropie as this is not a hobby and just a christmas gift for someone else. I am noticing that when I use a premade image (Retrorama rampage image) that some of games run slower and have input lag, even the psx games are choppy and some what unplayable. Retro arch also does not have all the same options (such as latency). When I upload everything from scratch using the standard retropie image all the games work great and how they should but the issue is that alot of games also dont work at all until I individually tweak certain options for the games (mainly arcade games) and this is very time consuming for someone who does not have the time (working heaps) and for someone who is not a retro console hobbiest. Also all emulators like dos box and scummvm are working on retrorama image but several emulators dont show up when I try to build it from the standard retropie image. I would like to use the premade image because it looks great with beautiful presentation, all the little options i want are done already such as simply using analog controller for all games, but just alot of games can be slow or not run properly for some reason.
My question is this, is it possible to use a premade image and simply turn off options somewhere that make the games run as fast as they should normally? and is it possible to find the latency option in retroarch somewhere to use run ahead latency from the image? or is it quite a difficult and long process that i should just bite the bullet and let the games run slow?

We don't support 3rd party images, including the ones loaded with ROMs. Ask the author(s) of the image for support.
