Pi 4B Dual Monitor - One with Retropie and one with Desktop?

I just purchased a Raspberry Pi 4B.
It has dual HDMI outputs.
I has seen articles about trying to have retropie on both monitors. But I was wondering if Is possible to set it up do that the Linux Desktop gui is on one monitor and Emulation Station displaying on the other?

As far as I know, using both displays requires X to run, but RetroPie doesn't use the desktop environment to run.
